Creamy Basil Spinach Pesto

End of summer, back-to-school vibes tend to shift us into a faster pace. But life on the go doesn’t mean we have to sacrifice flavor (or healthy eating). It’s time to harvest summer’s bounty and a great place to start is with one of the most fragrant herbs — basil.
Easy to grow in a garden or kitchen flowerpot, basil is an antioxidant that packs a punch of flavor and health benefits from its essential oils as well. These compounds mostly disappear during the drying process, so opt for fresh basil whenever possible to gain the most benefits.
This simple pesto recipe is so delicious it will have you finding creative new ways to use it — on pasta, sandwiches, salads, etc.

Serving size: 1 cup
Food processor
Ingredients:
- 1 cup packed basil
- 1/2 cup spinach
- 2/3 cup extra virgin olive oil
- 2 cloves garlic
- 2 TBS of Tofutti sour cream or more to make extra creamy
- Salt & pepper to taste
Directions:
Soak and wash your basil thoroughly, add all ingredients into a food processor, blend till smooth and voila…serve it up!
*Keep refrigerated
