Chickpea Hummus
Mar 23, 2024Impress your guests by whipping up this delicious homemade hummus in minutes. Though not a classic hummus, it’s an easy, fresh, café favorite.

Ingredients:
- 3 cups cooked chickpeas
- Small bunch fresh parsley (1/2 cup)
- 1-2 gloves garlic
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/4 tsp cumin
- 1/4 of red onion
- 1/2 tsp salt or to taste
- 3 tsp red wine vinegar
- Olive oil
- Ice cubes 2-3 cubes
Directions:
- Put all ingredients (except for the olive oil and ice cubes) into a food processor. As you start to mix drizzle in olive oil and add ice cubes till creamy.
- If the mix is too thin, put in fridge for an hour and it will thicken.
- For a more traditional take on this recipe add 1/2 cup of tahini for even richer consistency and flavor and squeeze in juice of half of a lemon.
- Serve with your favorite chips or toasted or grilled bread. Also delicious in wraps or sandwiches. YUM.
