Lemon Curd

A zesty, fresh vegan take on a classic lemon curd

It’s nice to have lemon curd on hand to add sparkle to cakes, scones, shortbread...or just indulge in by the spoonful! I converted one of my favorite recipes to a vegan version without missing the original ingredients. Pucker up and enjoy this goodness! 

Ingredients:

  • 1/3 cup lemon juice (about 3 lemons)
  • 4 tsp lemon zest (zest lemons before you squeeze)
  • 1/2 cup sugar
  • 1/2 cup vegan milk (I like to use silk creamer for extra richness)
  • 1 TBS cornstarch

Directions:

  1. In a small pot mix sugar and cornstarch together over medium heat.
  2. Slowly add rest of the ingredients, stirring constantly till it has thickened. 

Note: When cooled, store in a jar and keep refrigerated.
